Building analysis
NOBU restaurant, bar and lounge is located in the InterContinental Hong Kong hotel and opened in December, 2006. It was the first restaurant of the chain to open in Asia outside of Japan and is known for its “innovative new-style of Japanese cuisine.” [1] With breathtaking views of the Hong Kong skyline and world-famous cuisine, NOBU has been the recipient of many awards including Hospitality Design magazine’s HD Award for Restaurant and Fine Dining in 2008.[2]
The restaurant was designed by Rockwell Group who are also responsible for the design of six other NOBU restaurants all over the world. Rockwell Group is an internationally celebrated architecture and design firm based in New York City with satellite offices in Madrid and Dubai. “Crafting a unique and individual narrative concept for each project is fundamental to (their) successful design approach.” [3]
Rockwell Group incorporated traditional and modern Japanese elements to reflect chef Nobuyuki “Nobu” Matsuhisa’s cuisine and the countryside in which he grew up. Photographer/visual artist, Michael Palladino, collaborated with Maya Romanoff, who used millions of geode beads, to create the shimmering photographs of cherry blossoms (a signature feature of the NOBU experience) behind the bar in the lounge area. [4] The 18.7 foot bar top is made of a single piece of a 155-year-old ficus tree which fell during a storm. Every part of the tree was used throughout the restaurant. The base of the bar is made of onyx and is backlit which gives off a soft amber glow. The walls surrounding the bar are made of 7,700 smooth black river stones for textural dimension and contrast. The floor is black and white terrazzo in a wave pattern and the ceiling is covered in 450,000 sea urchin spines. [5]
Chef Nobu grew up in Japan and developed his craft all over the world including Peru, Argentina and Alaska. He currently has over 20 restaurants internationally with more to open in the future.
